Strawberry cake

Ingredients for a 20x20 cm baking tin, all at room temperature:u

  • 220g cake mix u
  • Heaped teaspoon of baking powder
  • 100g unrefinedfine cane sugar (alternative: honey, agave)
  • 10gvanilla sugar or a teaspoon of vanilla extract
  • 120ml of milk
  • 100g (1/2 cup) melted butter, cooled
  • 2 eggsFilling:350g of strawberries (you can substitute with plums, applesor blueberries)

 

Preparation:

Mix the mixture with baking powder and vanilla sugar. Beat the eggs with cane sugar for 6 minutes at high speed, then reduce the speed of the mixer and slowly pour in the milk, then the butter. Finally, add the dry ingredients and mix on low speed just until combined - no longer. Pour the batter into a paper-lined tin, let it stand for 5 minutes, and arrange the halved strawberries on top. Bake for 50 minutes at 180°C.
