Recipe for 6 rolls

Additional ingredients:

  • 15g olive oil (4 teaspoons)
  • 10g unrefined cane sugar (or honey, agave)
  • 10g apple cider vinegar (2 teaspoons)
  • 410g water at approximately 35°C (95°F)

For decoration:

  • 3 tablespoons of your favorite milk
  • 3 tablespoons of poppy seeds or other seeds

Preparation:

  1. Measure out 375g of the mix and transfer it to a bowl.
  2. In a separate container, combine water, olive oil, vinegar, and sugar.
  3. Pour the liquid mixture into the flour and mix vigorously, first with a whisk, then with your hands, for about 1 minute until the dough is smooth.

Option 2 – Using a device:

  • Add the ingredients to the device bowl, mix briefly on high speed, and then knead the dough for about 2 minutes on low speed using a hook or S-shaped blade.
  1. Transfer the dough to a bowl, cover with a damp cloth, and leave to rise for 40-60 minutes.
  2. Once risen, divide the dough into equal portions and shape each into a round roll.
  3. Brush the rolls with milk. Roll them in poppy seeds or other seeds.
  4. Place the rolls on a baking tray lined with parchment paper and let them rest for 15-20 minutes.

Meanwhile:

  • Preheat the oven to 230°C (446°F) with the fan function.
  • Before baking, score the rolls with a sharp knife in a cross pattern about 0.5cm deep.

IMPORTANT:

  • Place a pan with 5 ice cubes or 100ml of water at the bottom of the oven.
  • Bake the rolls in the oven with the fan function at 230°C for 10 minutes. Then, reduce the temperature to 200°C (392°F) and bake for another 15-17 minutes with the fan.
  1. Cool the rolls on a rack.
    NOTE: Slice only after cooling!
